Fermentation in stainless steel tanks and ageing in 2- to 3-year oak barrels for 6 months.

Colour:

Intense crimson

Nose:

Concentrated and spicy, with notes of black pepper, garrigue and black fruit.

Palate:

Well-structured and generous, with a long, aromatic finish of black cherries, blackberries and spices.

Pairings:

Ideal with grilled red meat, game, roast quail with chestnuts or guinea fowl with prunes.

Serving temperature:

15-18°C. Best if decanted.
