Vinification:
18 months in amphora.
Nose:
Deep and subtle, with notes of sweet spices, blackcurrant, black fruit and gunflint.
Palate:
The freshness is striking, driven by the minerality. On the palate, aromas of black fruit and dried flowers mingle with earthy and spicy flavours. The mouthfeel is intense and deep, and the finish goes on for ever.
Pairings:
Ideal with all types of grilled meat, elaborate dishes with Mediterranean flavours, shoulder of lamb confit with thyme or spicy, fleshy fish.
